Eastern Halloween

We had the most successful night so far...Full house. We are filled with reward from happy smiles, popping eyes, empty plates and compliments from all who came.

We began working on this menu every day and night five days previous: Testing recipes, trying them out again just to make sure we remember how to make them.

Essentially my menu (I do Eastern, Simon does Western), I prepare most of it before hand, do the ingredients/ shopping list - Simon prepares them to be served and I mainly do the table service on the night.

When Simon cooks and plans a menu, it is done with precision (I have a guerrilla style cooking which drives him mad) because I always forget how much of something goes into anything. He has his excel sheets out plotting the operation. He has the shopping list worked out, the schedule of service, how long things takes to cook, when to cook it and on what hob, how many plates we need to serve on.

This can of course drive me mad but without this - (which is made from all our lessons learned from previous nights) we could not run as smooth as we did. That was why we were calm. There were only one or two mistakes made this time round such as the delay on the chips which made us run a bit late.

We have been ever so fortunate to have really nice guests come to eat. A mixture of couples and groups, some were placed together. Everybody mingled and got on with each other really well. Some people came to chat to us in the kitchen which was lovely because I had been liaising with some over email and Twitter for the past few weeks.

Menu -

-Hot Sweet Sour Soup With Catfish, Tomatoes, Pineapple & Beansprouts

-Frogs Legs Terriyaki w/ Vietnamese Parsley & Sweet Basil Seed Cocktail

-Vietnamese Spring Rolls With Pork, King Prawns, Black Fungus & Glass Noodles

It was lovely as always to have dessert with our guests and some wine. Gossiping and nattering and laughing. Great end to an evening.

Lacey:
"Just got home stuffed from halloween supper club. WOW, last week was good but this week it was amazing! The food was exquisite! No need for doggy bag, scoffed the lot. Anyone considering this ....,.. no question. Delicous. The company was great, a really good mix of people. Table service was top notch. I really cannot recommend this enough. Thank you so much for an amazing night x"

Chris:
"Had such a good time last night - fantastic food, lovely hosts. Thank you and see you again soon, I hope."

Matthew:
"Simon/Uyen, Just to say thanks for Saturday. Impressive stuff. I have to say my favourite feature is sharing a table with strangers. I'm not sure it would have been so much fun for me if Rejina and I had been stuck on a table for two in the corner, and god knows it would have been less fun for her...Compliments to the chef!"
Tom:
"thanks so much or such a wonderful supper. It really was one of the best meals I have had for ages (food, ambience and all)."
